Made Teresa's Italian meatballs in homemade tomato sauce for dinner today. The meatballs turned out a lot better then the last time when I was using elk meat, but they still don't hold together when I boil them. I used loads of bread crumbs this time and two eggs so there shouldn't be a problem. I wonder if it has to do with the Parmesan cheese I'm using. For the last two times I've been a bit cheap and bought the already grated and dried Parmesan instead of buying a big chunk of Parmesan and grate it myself.
Anyhow there was nothing wrong with the taste. Lime, Parmesan and basil are a wicked combo. And lots of garlic of course!
