When I started my love affair with wine (i.e. tasting, learning and collecting) I got the advice to buy fine NV champagne and store them for a couple of more years before popping the cork. An excellent advice which has given my wonderful moments drinking superb champagne.

This particular bottle had a lively frothy bead with white cherries, apricots and some minerals ending with a both spicy and fresh finish.
